The wildest hour from Rome: Campo Imperatore's 'Little Tibet' under the Apennines' highest wall, Rocca Calascio's ruined fortress on its ridge, and wolves genuinely out there in the beechwoods. Then down to a coast of trabocchi, spidery wooden fishing platforms turned tiny restaurants. Saffron, skewered lamb, and almost no other tourists.
